Sausage competition set to sizzle in downtown Auckland

Hundreds of sausages will be sizzling away at Auckland's Wynyard Quarter on Tuesday in a competition to find the best banger of them all.

A panel of 24 judges have gathered for the Great Devro New Zealand Sausage Competition, where 12 categories of the goodies will be scrutinised for looks and flavour to find 12 finalists.

Panelist Kathy Paterson says there's likely to be some interesting flavour combinations, but says simple is often best.

"Some of those classic combinations are easier, and then maybe with a bit of a twist to give them a bit of interest and put them a step ahead of the other sausages."

She says she hopes contestants have learnt from their mistakes from last year.

"We had one that was hoisin sauce and saffron. You have to be very clever if you're crossing cultures, that you actually put the right flavours and the right ingredients together, because that was a really strange combination."

She says there are many elements that make the perfect sausage.

"We're looking for a nice texture - if they cook up well, they're not too fatty, not too highly seasoned, they cut well, they don't crumble, they've got good skin so they cook nicely and they brown evenly."

The supreme winner will be announced on Thursday, October 13, just in time for National Sausage Day on October 14.
