A frightening knife attack at a café in the western Sydney suburb of Merrylands two days ago has been caught on CCTV camera.

Footage shows the victim, professional cage fighter Mehdi Rahimi, trying to ward off the slashing motions of the knife-wielding man as his girlfriend Chiara Baird attempts to hold him back.

The café owner is also seen making attempts to prevent Mr Rahimi suffering a fatal blow.

Mr Rahimi survived the ordeal despite suffering wounds to his head, chest and hands - but the video suggests things could have been far worse for the 36-year-old.

The attacker was almost maniacal as he continually lunged towards Mr Rahimi with his knife, before going outside and fleeing the premises altogether.

A manhunt was set up to find the offender, and later on Saturday afternoon, 27-year-old Reza Hosseini was arrested and charged with intent to cause grievous bodily harm.

On Sunday a court was told that the two knew each other beacuse they went to the same gym, and that Hosseini had allegedly been trying to intimidate Mr Rahimi.

Hosseini was denied bail after his court appearance, while Mr Rahimi remains in hospital in a stable condition.
