‘Eat For Keeps’ programme delivers mouth-watering recipes

Robert Harris Cafés have come up with a new initiative to help combat obesity and diabetes epidemics.

They’ve teamed up with ‘Eat For Keeps’ - a programme which specialises in delivering lower GI and lower fat foods.

‘Eat For Keeps’ was born out of a vision to address the current obesity and diabetes epidemics and to help people achieve permanent and healthy weight loss.

The ‘Eat For Keeps’ menu items are prepared and baked fresh daily at each Robert Harris Café.

Robert Harris Café Operations Manager, Tracey Bartlett explains “We are delighted to be involved with ‘Eat For Keeps’ and the provision of a range of healthy food options is one of our key focuses.

"Robert Harris is committed to gradually adapting more of our current recipes to increase the number of low GI, low fat options available."

Try out this delicious recipe specially developed by the ‘Eat For Keeps’ programme:


Vegetable Frittata

Ingredients
600 grams mixed baked vegetables - potato, kumara, carrot, pumpkin
Half a red onion - sliced
50 grams silverbeet - finely sliced
2 coloured peppers
1 courgette - sliced
60 grams diced feta
30 grams grated cheese
30 grams pumpkin seeds
6 eggs
Half a cup of cream
1 cup of trim milk

Method
1. Bake off root vegetables in oven with a little olive oil and salt and pepper.
2. Line and grease loaf tin.
3. Layer baked vegetables, with onion, silverbeet, peppers and courgettes.
4. Dice feta and spread across vegetables.
5. Spread grated cheese and pumpkin seeds over the top of the frittata.
6. Mix together eggs, cream and milk and pour over filling.
7. Bake at 180°C for approximately 1-1 hours.

If colour becomes too dark cover with tin foil to avoid further colouring.
