Coco's Cantina Orange Cake recipe

This morning on the show, we spoke about the importance of eating ethically and reducing food waste. 

Coco's Cantina Executive Chef Guilherme Bezerra spoke to Duncan Garner about this, and his orange cake which uses an entire orange.

Orange Cake Recipe:

Batter:

- 1 whole orange 

- 3 organic eggs

- 1/2 cup olive oil

- 2 cups organic golden sugar

- 1 pinch salt

- 2 cups organic all purpose flour (sifted)

- 1 Tbsp baking powder (sifted)

Glaze:

- Zest and Juice of 1 orange.

- 1/2 cup organic golden sugar

- 1 Tbsp organic butter

Method:

  1. Preheat your oven at 180 degrees celsius.
  2. Line a nine inch cake tin with baking paper. 
  3. Cut the orange in four and remove any seeds.
  4. Place the orange, eggs, olive oil, sugar and salt in a blender and blend until the mixture is pale and has a smooth texture.
  5. Pour the batter into a mixing bowl and fold in sifted flour and baking powder until well incorporated.
  6. Place batter in the lined cake tin and bake for around 30 minutes or until a knife comes out clean.
  7. When cake comes out of the oven, make your glaze by bringing all ingredients to a boil until the sugar is fully melted. Pour glaze on top of the cake while the cake is still warm to soak up the flavours.

Serve it warm or cold with yoghurt or cream.
